     Ultime was opened on March 2021, led by Executive Chef Shirosan who enjoys combining ideas and culinary skills to create unique fusion cuisine. At Ultime, they empower your meal journey to another level by crafting and creating a new representation of molecular fine cuisine, boulangerie and patisserie. There are 4 menus available: Lunch Degustation (RM120/pax), Elite Lunch Degustation (RM260/pax), Dinner Degustation (RM390/pax) and Elite Dinner Degustation (RM650/pax). For my first visit, I decided to try out their Dinner Degustation Menu.

Choix de Pain- Bread selection that were baked in-house
Comment: The most unique feature of Ultime's menu is their bread selection, unlike in any other restaurants that I had been to. However, I find it disappointing because the bread were served cold. The waiter swapped for another warm bread after I made a request.

Four types of butter- Salted Butter, Pesto with Basil & Parmesan Cheese Butter, Porcini Butter and Charcoal Butter
Comment: My favorite choice was the pesto butter

1. Miso Waffle- with Ikura and Chantilly Cream
2. Croque Madame- with Brioche, Truffle Mayo and Uni
3. Sea Foie Gras- with Monk Fish and Ponzu Jelly
Comment: I preferred miso waffle among 3 of them. Interesting combination with nice texture similar to cracker bursting with cream. I find the other two dishes quite normal in terms of texture and taste wise.

Duo Tartare- Scallop on top with Tuna at the bottom with sake jelly and ponzu jelly
Comment: Delicate dish with fresh scallop and tuna, definitely taste better with the ponzu jelly. However, I would prefer fresh scallop comes in its original form so I could really taste the texture of the scallop.

Fish in Fur- Herring, beetroot salad, onion, raddish, mashed potato, zucchini, egg white and yolk
Comment: Pretty tower of salad with a variety of texture, but taste wise doesn't wow me at all. I don't get the concept of this dish, I don't see the highlight of this dish.

Foie Gras Brulee- Foie gras, black truffle, puff pastry, egg and caramelized brown sugar
Comment: This dish was delicious, very flavorful with a hint of sweetness.

Mushroom de Ultime- Maitake, black truffle
Comment: Similar to wild mushroom soup

Sorbet- White chocolate snow, watermelon and lychee sorbet and watermelon salsa
Comment: Refreshing palate cleanser

Brittany Turbot (Add on RM50)- with zucchini medley and yuzu kosho
Comment: Firm texture with a slight buttery taste, taste good overall but I wasn't happy with the small portion as this was the main course.

Aging Smoke Duck- with heirloom beetroot and flower herbal tea
Comment: Tender meat with mild herb taste. Portion was small too but better than the brittany turbot

Crazy Hazelnut- Milk chocolate chantilly and raspberry gel
Comment: Quite a good dessert with the hazelnut and milk chocolate combination. Not too sweet for me.

Napoleon Mille Feuille- Salted caramel and chantilly cream

Bon Bon Chocolates- From bottom to top: Yuzu, Rose and Lychee, Salted Caramel, Orange
Comment: The chocolates were too sweet for me, not to my liking. Rose and lychee was the acceptable one for me.

     In my opinion, there is room for improvement to make their food taste better. I think they can do a lot better in the future. Since Ultime is new, you may drop by to give a try. Check out their menu below!
